There is a distinct difference between Mexican and New Mexican food recipes. Mexican sauces tend to use jalepeno (sp. jalapeno) peppers while New Mexican sauces generally use "green chili peppers or red chili peppers". When our recipes call for green chili peppers we mean Anaheim, Hatch or something similar - NOT jalepenos. Tex-Mex tends to be hotter than Mexican (more jalepenos) or New Mexican, but Santa Fe style is usually the hottest of all. It is hotter than even the regular New Mexican food recipes as they tend to use more and hotter chilie peppers.
If you travel to New Mexico and order a local dish, be prepared to answer the question "Red or Green?" as they will want to know whether you want red chili pepper sauce or green chili pepper sauce on your dish. If you are afraid it will be too spicy, you can ask for the sauce "on the side" and season to your taste. I prefer the "green", but many prefer the "red". If you want to sound like a native, you can answer; "Christmas", telling them you want some of both red and green!
